As an experienced instructor of 15 years, I’ll guide you through the technique, materials, and principles of this traditional art form. Roast and finish handcrafted arare (rice crackers) at Sōzen—the confectioner that produces arare for the Imperial House of Japan, the Royal Family of Dubai, and many five-star hotels—guided by Japan’s only certified jouwazashi (master arare craftsman). • Roast the arare—which are prepared over ten days by skilled artisans—by shaking them over heat in a wire mesh basket and coating them with Sōzen’s secret sauce. • While your arare are cooling, roast tea leaves to make hōjicha (roasted green tea) and enjoy it with a sampling of our signature warabimochi (bracken starch dumplings). I’ll share a bit about Sōzen’s history as you work. • Pack your finished arare and place them in a traditional local textile pouch to bring home as a memento of our time together. You will also get to learn about family life in Japan. We are a bilingual family (English-Japanese), so you don't need to worry about having any language problems. Our house is quite large, so there is plenty of space for you to relax and enjoy the following activities: (1) Try Japanese calligraphy (shodo), which is a traditional art with a brush. When you focus on the lines and strokes by using it, you feel you are doing mediation. You can learn about Japanese writing system and write Japanese hiragana, and much more to exercise your fingers. (2) Try out a kimono from a selection of colours and patterns. We will help you put on the kimono. You will feel how tight and how uncomfortable, yet beautiful it is to wear one. (3)Enjoy tea ceremony (sado) in a Japanese tatami room, where you sit on the floor. It is a form of meditation, immersing yourself in the act of preparing, serving & drinking matcha green tea (with a sweet) in an authentic environment.

The first spot to visit is the scenic Yubune tea field. We continue walking surrounded by idyllic terraced fields and stunning panoramic views of endless greenery of rice and tea plantations. As we get close to the top of Hakusan Shrine, the scenery changes, we will walk through the cedar woods, experience both the fresh air high up on the mountain and the serenity of the forest. Our destination will be at d:matcha's organic tea farm and join our tea picking activity. Finally, we will head back to our meeting point, and you will try green tea tempura made with the tea leaves you picked, after that you will have the chance to enjoy a tea tasting session and you will learn to whisk your own matcha.
