I will be on vacation September 23 to October 9th I will get back to messages upon my return. After picking you up at your downtown Toronto Airbnb or other convenient location, we will start your adventure to Niagara Falls. Along the way we will stop at several picturesque waterfalls, a family owned bakery* and an award winning winery. During short walks along tee lined paths at these smaller falls, you’ll learn about the geology of the area followed by delectable treats from a local bakery (extra cost, hours vary). Then, we’ll hop in the car and continue to Niagara's wine region, where we will stop for a tasting (including ICE wine) at one of Niagara Regions most award winning wineries. After a delicious sit down lunch, we’ll go to the world-famous Niagara Falls where you will bathe in the mist from the Falls as we walk along the rim of the Niagara Gorge. We will have more than enough time for guests to take the optional, self led, Niagara Boat Cruise (in season when available). Following our visit to the upper edge of the mighty Horseshoe Falls we will return direct to Toronto. *The bakery is closed on Mon. & Tue. We stop at a local coffee shop instead. Regardless we will have a blast. If you do not see a preferred date on the calendar please request a date that is suitable. We follow all provincial and municipal Covid safety protocols

My Winter Walking Tour of Old Quebec is an introduction to local history, architecture and culture. You'll learn about New France, the Conquest, the American revolution, the evolution of the city, the French-Canadians & Anglo-Canadians, the Quiet Revolution but also about the ice bridge and the Winter Carnaval for example. You’ll discover Old Port, Petit Champlain (with Place royale & Batterie royale), the Château Frontenac, the City Hall, the Seminary, the Morrin Centre, the St John Gate and more. Itinerary is designed for Winter: less windy spots and some secrets to keep you warm. Finally, you'll discover a quaint city where every street corner is a postcard. Yes, you can enjoy a 2h walking tour in Old Quebec, from November to March, without losing a frozen toe, without frost bite. Tasting & Tour of a Craft Distillery
We'll meet in our tasting room before taking you into the heart of the action inside the distillery. Once inside, you'll get to see the entire gin, vodka and whisky (yes, whisky!) making process from start to finish. Often we'll be right in the middle of production so you'll get to see, smell and later taste just what it is we make. Of course, the tour ends back in the tasting room where you will sample our 2 vodkas and 3 gins. Other things to note: We do sell our products on-site! So you can take our spirits home with you to enjoy with family and friends. Note worthy: children under 18 years old are free of charge, accompanied by parents.
A Walking Tour of Toronto's Underground City
Winters in Canada can be very cold. Participating in an outdoor activity can be uncomfortable, especially if you are not used to the cold weather. This tour makes a winter walk much more pleasant by using Toronto's PATH network to move from one downtown sight to another. Only on 3 occasions will we step outside for a few minutes to have a look around at what lies above. The city's PATH network is over 30 km (20 miles) in length, and connects 70+ buildings in the downtown core. The PATH has 8 hotels, 5 subway stations, an arena, a shopping mall and City Hall attached to it. On each work day, an average of 300,000 people use PATH to move from office tower to office tower. Mushroom & Wild Edibles Hike
Our Mushroom Workshop takes place during a rejuvenating 4 hour nature hike on the trails of a 400 acre conservatory gem with flora ranging from old-growth forest to seasonal food plants. We will uncover new worlds of uncultivable, wild edible plants in their natural forest state. We seek a multitude of delicious edibles (when in season) such as Yellow Chanterelles, Black Trumpet and Cinnabar Chanterelles, Hedgehogs, Boletes, Oysters and my personal favorite - Lobster Mushrooms. Growth is weather and seasonal dependent. You will learn to identify these and other seasonal edibles such as specific growth edible mushrooms, and will be introduced to spore printing. In the spirit of respect for the bio-system we will explore, you will be introduced to ethical harvesting, long term sustainability and propagation for future generations.

Learn to prepare espresso in a unique mini cafe
Learn how to prepare thirdwave style espresso with a professional barista! Join me in a unique micro coffee bar inside my stationery shop. Amateurs and coffee nerds alike are all welcome. During this experience, we'll get behind the cozy counter and I’ll go over the technical side of making the perfect espresso. I’ll explain how to prepare the perfect shot, we’ll taste some coffees together and then talk about aromas and flavors. Afterwards, it's your turn to practice behind the machine. This is your chance to have all your coffee questions answered! Chez nous, vous serez entourés de 60 de ces sympathiques et doux petits camélidés de notre élevage pour une durée de 1h30. Durant ce temps, c'est l’occasion pour apprendre à les connaitre et à développer vos connaissances sur eux. Vous interagirez avec ces animaux notamment, en les touchant, en les nourrissant et lors de diverses activités amusantes. Votre visite vous permettra d’apprendre sur les particularités de leur nature, de leurs besoins et aussi de bénéficier de cette occasion pour découvrir leur personnalité individuelle. Nous allons aussi vous introduire et renseignez sur leur formidable fibre/laine aux qualités extraordinaires et uniques. Votre visite comportera aussi l’occasion de visiter notre secteur pouponnière avec les jeunes bébés alpagas, appelés "cria", et de prendre une petite promenade avec « votre propre » alpaga sur nos sentiers champêtres. Intro to Pottery wheel
With guided, professional instruction, you'll have a fun and creative time making an item out of clay on a pottery wheel. I will show you how to work with the clay, get it ready for the wheel, center it, and eventually start shaping. Usually students can make either a small bowl, plate, mug or vase on their first try. You will get up to 30 minutes of time on the wheel which is plenty to create one item, and then you can add accents to your piece i.e. handle and you'll get to handbuild for the remainder of the time (add accents to your piece). You can take the pottery home with you the same day you make them, or—if you'd like—I can fire your work, glaze it, and ship it to you for a small fee. I also offer other experiences: canvas painting, glass fusing, hand building with clay, mosaics, glow in the dark painting, pottery painting, silkscreening. ***Drop me a note if you'd like alternate time for your appointment.****

A trip to Montreal isn't complete until you've tried one of these amazing bagels. So why not try your hand at making them yourself? I will teach you the secrets on how to make some deliciously unique and authentic Montreal style bagels at home, the easy way. We will start by learning how the ingredients used affect the Bagels and the final result. Then we will all measure our ingredients using scales. After that, I will show you how to properly mix and knead the dough which you will do on your own right after me. I have adapted the best Boulanger (Bread Maker) techniques to the home kitchen so you will become a confident baker at home in no time! After mixing the dough, we will learn how to shape the bagels, boil them, dress them up with various toppings, bake them and finally eat them fresh out of the oven! Vous allez commencer votre expérience chevaline par une visite dans notre grand troupeau de 40 chevaux où vous allez avoir la chance de les approcher et les observer dans leur environnement naturel et apprendre des choses interessantes sur eux. Ensuite, chaque client est jumelé avec un cheval selon sa taille et son expérience. Vous allez conduire votre cheval à pied vers l'écurie et vous allez avoir la chance de créer un lien de confiance avec lui en le brossant et en le préparant. Une fois que tout le monde a son casque, nous quittons l'écurie pour aller aux manèges. Une fois sur votre cheval et les étriers ajustés, nous vous donnons une petite formation sur les techniques de conduite. Le manège clôturé est l'endroit idéal pour que chacun puisse tester ses nouvelles connaissances en équitation. Après cette initiation, nous partons en balade dans nos magnifiques sentiers en montagne avec vue splendide sur les Appalaches. À mi-chemin, nous arrêtons en haut de la montagne pour prendre des photos et profiter de la belle vue. Nous terminons l'activité en remerciant notre cheval pour la belle randonnée. À la fin, vous êtes invités à rester plus longtemps pour profiter de l’ambiance et de notre aire de pique-nique, au cas où vous auriez apporté votre goûté. Coffee Sensory with a Food Scientist
We'll meet in the tasting room of White Heron Café. There, you will enjoy your choice of beverage (coffee or tea), while you learn about how coffee is grown, processed, and graded. You will be briefed on the science of sensory evaluation and will calibrate your palate in a smelling and tasting exercise. We will then move on to the main event which will be a coffee tasting (cupping) featuring six unique specialty coffees from all around the world. You will leave this experience with a newfound understanding of your own coffee sensory abilities and preferences as well as skills that can be applied to all food & drink tasting.
